From ingredient selection and distillation to aging and bottling, our process is unique, defined by careful planning, thought, and expertise, and both inspired and supported by the place we call home.

Wahoo Distillery is different for a reason: We combine expertise, high-quality ingredients, and a state-of-the-art process to create a decidedly unique whiskey.
1.
Water
We draw our water from the High Plains Aquifer. The water’s natural overall hardness provides characteristics optimal for whiskey distillation and sought after worldwide.
We store and mill our corn, rye and malted barley on site. Our corn is sourced from local farms.

Grain
We mix our grain with water and heat it to 185 degrees Fahrenheit to convert the starches to sugars, which are then consumable by yeast.

Mashing

Fermentation
Sticking with tradition, we ferment our mash “on the grain.” When fermentation is complete, we remove the grain and deliver it to local farmers to feed their livestock, reducing our overall level of waste.

Column Distillation
We choose to utilize a column due to its increased efficiency, small footprint, and ability to create a consistent product.
6.
Aging/Maturation
Using modern technology, we expedite the aging process, which reduces our time to market, keeps our whiskey quality consistent, and reduces our overall environmental footprint. Our flavor comes from the mixture of American and French Oak used in our aging process.
